ε- Polylysine is polymerized from 25 ~ 30 lysine residues. It has strong antibacterial ability and can be used as a preservative for food preservation. ε- Polylysine has a wide antibacterial spectrum and has a certain antibacterial effect on Gram-positive bacteria, Gram-negative bacteria, yeasts and molds in acidic and slightly acidic environment.
